Make a Quick and Easy Meal With These Recipes - Cheesy Fish Fillets, Crunchy Coleslaw, Choco Pudding

These recipes are perfect for a quick and easy meal. The slaw goes together quickly but is better if chilled for at least an hour. So you can make it ahead and still enjoy it for dinner. It also makes a great dish for pitch-ins, reunions, parties, office luncheons, etc. The fish fillets are breaded with finely crushed cheese crackers after being dipped in the French dressing. To make this complete meal, first prepare the coleslaw and set it in the refrigerator. Second, mix the pudding and bake it. When pudding is removed from the oven, turn up the oven heat too 500 degrees and bake the fish for the 12 minutes or so until done. Quick, easy, and takes only an hour for all three to be ready.
CHEESY FISH FILLETS
2 lb white fish fillets i.e. cod, blue hake, etc
1/2 cup French salad dressing
1 1/2 cups finely crushed cheese crackers
2 tbsp butter, melted
Cut the fish fillets into serving portions.
Pour dressing into a shallow bowl and dip the fish into the dressing.
Put the cheese cracker crumbs into a pie plate and dredge the dipped fish through the crumbs, coating well.
Place the fish fillets on a greased cookie sheet and drizzle the butter over the fish.
Bake at 500 degrees for 12 minutes or until fish flakes when tested with a fork.
Yield: 4 servings
QUICK AND CRUNCHY COLESLAW
1 bag (1 lb) coleslaw mix*
1/2 cup sliced green onions
1/2 medium red bell pepper, cut into thin strips
1/4 cup slivered toasted almonds
1/4 tsp freshly ground black pepper
3/4 cup Italian Salad Dressing
In a large bowl toss the coleslaw mix, onions, bell pepper, almonds and pepper together until mixed. Add the dressing and toss to coat. Refrigerate approximately an hour before serving.
Yield: approximately 10 servings
*Also works well using broccoli slaw instead of the coleslaw mix.
HOT FUDGE PUDDING
1 cup all-purpose flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup unsweetened cocoa powder
1/2 cup milk
2 tbsp melted butter
1 tsp vanilla extract
1 cup packed brown sugar
1 1/2 cups boiling water
Preheat oven to 350 degrees.
Grease an 8-inch square glass baking dish; set aside.
In a medium bowl, combine the flour, sugar, baking powder, salt, cinnamon and half the cocoa powder. Using a wire whisk, whisk in the milk, butter, and vanilla just until smooth. Spread the batter evenly into the prepared dish.
In a small bowl, mix together the brown sugar and remaining cocoa. Sprinkle the mixture evenly over the batter. Carefully pour boiling water over the mixture in the baking dish; DO NOT STIR.
Bake for 30 minutes. The batter will separate into cake and pudding layers. Cool pudding in the pan for 10 minutes.
Serve in dessert dishes while warm and top with vanilla ice cream, if desired.
