Shammi kabab is an extremely popular snack or starter recipe that is usually served in numerous restaurants around Northern India. Shammi Kababs are prepared using ground meat, usually lamb or mutton. The taste is further elevated due to presence of various spices including cloves, cardamom, and cinnamon, along with coriander and onions. The beautiful combination of all these ingredients develops into a unique meal that is not tremendously exquisite.

Recipe Ingredients
Minced meat - 250 grams
Gram lentil - 4 tablespoons
Cumin - � teaspoon
Potato - 1
Fennel seeds - 1 teaspoon
Green cardamom - 2
Whole red chili - 6
Coriander seeds - 1 teaspoon
Egg - 1
Salt - 1 teaspoon
Garlic cloves - 4
Mint leaves - 2 tablespoon
Fresh coriander, chopped - 2 tablespoon
Ginger, chopped - 1 teaspoon
Green chilies - 2
Oil, to fry
All spice powder - 1 teaspoon
Recipe Preparation
1. Take a big size pan and add minced meat to it, along with cumin seeds, whole coriander seeds, fennel seeds, soaked gram lentils, garlic cloves, crushed ginger, and whole red chilies and mix well. Now add 2 glasses of water to this mixture and bring to a boil on medium or low flame.
2. When all the ingredients get cooked and become tender, as well as the water gets absorbed completely, remove the pan off the flame. Let it stand for some time and allow it to cool down.
3. Next, add boiled potato to the cooked meat mixture and then run the mixture to a smooth consistency in a grinder / chopper.
4. After this, add eggs, chopped mint leaves, chopped green chilies, chopped coriander leaves, along with all spice powder to the mixture and mix it extremely well.
5. Prepare flat and round shaped kebabs and fry them in enough oil just to cover the pan's surface till they gain a rich brown color. Make sure not to add too much oil to the pan as the kababs can split up. Make sure to turn the kababs once or twice while frying.
6. Once fried properly, remove the kababs off the pan and place on an absorbent paper towel to remove excess oil from them.
7. Garnish using chopped coriander leaves, green chilies, lemon juice, and slivered onions. Serve along with Coriander and mint chutney, and chapatti or Pulao.
