Heat the olive oil in a wide pan and fry the chorizo sausages until they release their oil and flavor. Add the onions and garlic to it and cook until they turn translucent. Add the tomatoes and cook well. To this add the saffron and the paprika. When it is well cooked add the leftover chicken and vegetables. Add the broth or stock until the mixture is covered. Season it with salt.
When it comes to a boil add the rice into it, topping the liquid with hot water or more broth until the rice is covered completely. Cook for 20 minutes until the rice gets cooked and all the liquid has been absorbed. Turn off the flame and cover the pan with a kitchen towel to catch the excess vapors. Garnish with fresh chopped parsley and wedges of lemon and serve after 10 minutes.
